Boudin casings: why?

Why are they the consistency of a latex glove? Why not use a regular sausage casing?

I am pretty sure it is the same stuff. It gets crunchy if you grill it.

I notice this a lot on the gas station boudin in the steamers. I like the crunch of smoked boudin casing. Like they already said, it is sausage casing, jut smoked or grilled makes it crunchy, not a rubber band.

got some at a gas station at Natchitoches and it frickin grossed me out. It was thick like and rubbery.

Its all the same thing.. Pig Intestine. However Sausage is packed in tighter and it stretches and then when its smoked or grilled it breaks easy.
Boudin is already cooked THEN put into the casing then typically steamed. The casing will not become sausage like as a result.
Most people dont eat the casing at all.

Hog casing is rubbery if it is steamed, I just squeeze the good stuff out, as mentioned, it does get nice and crispy if grilled or broiled.

Are you serious in not knowing that?
I know of very very few people that eat the casing. The only people I have ever met that do didnt grow up eating the stuff or trying it for the first time. I have personally never met someone that grew up in the acadiana that eats it without grilling it or getting it smoked or fried.
This has always been the way to eat boudin throughout my family and friends.

I know hundreds of acadians personally. Dont know many that dont eat boudin. Know very very few that eat steamed casing. I give that shite to my dog to eat. Not sure why anyone wants to chew on a condom.

From my perspective growing up in Gueydan. Boudin is steamed, not grilled or smoked. Casing is rubbery and NEVER eaten. It wasn't until I moved to Baton Rouge did I ever hear of anyone eating the casing.

Im not sure why anyone would choose to eat the casing if steamed. It doesnt add to it and actually is pretty disgusting.
Now if the casing is cooked apart from steaming and breakable that is different.
I would say I have the same experience.

I buy Richards boudan from the store and grill it or saute it in a frying pan. I tend to remove the casing if I saute it.
