Grilled Caprese Sandwich Method

Made one last night on multi grain bread.
I lightly brushed olive oil on both sides of each slice of bread. I put fresh mozz on the bottom slice, drizzled some balsamic glaze on top, then some large basil leaves, then the tomatoes, peppered the tomatoes, put a little more glazed balsamic, then more slices of the mozz, then the bread. Olive oil works great for grilled cheese sandwiches if you're trying to avoid butter. I love butter smeared grilled cheese sandwiches, but olive oil is the way to go for this one.
Two thing I would do differently are:
1) let the tomato slices sit on paper towels for a bit before using them. They were a little too juicy.
2) Layer the basil leaves on both sides of the tomatoes. It needed a little more since I was eating it with bread and not as a salad even though I had a generous amount.
Darn good summer sandwich and nice use of the fresh tomatoes with which we will be blessed in the coming months. I used Liuzza's Creoles.

sounds legit
I used to make these all the time a few years ago with the tomatoes from the garden. I did mine on a Foreman grill though and it came out like a panini

I've got all thesee ingedients either in the kitchen or in the garden. Plus I've got an in-house sandwich maker. This is gonna happen soon. Prolly add bacon though.

I made bacon and was going to add it, but it seemed a bit much after I thought about it and I decided I wanted the pure caprese flavor, so I ate the bacon on the side like chips.
If you use the sandwich maker, don't squish it too much because you'll have tomato juice all over since it's a main component of the sandwich.

Good tip. I would also add a little salt to take some of the moisture out they wer on the paper towels.

Looks delicious! I was gonna make this last night after the posts about it yesterday...but a friend called me to come over for dinner for caprese pasta! LOL

Me too! It's such a great summer meal.
Have you had the seafood caprese at Cafe Giovanni? It's AMAZING!
I like to go there just to sit at the bar and have that appetizer and a glass of wine.

I've had the caprese, there, but not the seafood caprese. The dressing Chef Duke uses is REALLY good. He said he was coming out with a cookbook a few years ago, but I haven't heard anything about it since. I could go there and feast on apps, only. I usually order multiple apps rather than a meal.

These things are awesome. Currently working on my second one of the morning. Only difference is I put some bacon on mine.
I had to make mine myself though on account of my sandwich maker is at the beach watching it rain.

Poor baby. I think you should make them for your sandwich maker upon her return and earn yourself some credit time at the camp for the future.
