grilled caprese sandwich

made a grilled sandwich for lunch, using the ingredients of a caprese salad.

started with a couple of pieces of good sourdough bread. layered slices of mozzarella, tomatoes, fresh basil and more mozzarella between the two pieces of bread (drizzle with a little olive oil, as well as salt/pepper). browned it on both sides in a skillet on the stove top and then finished it in the oven on broil.

excellent, refreshing sandwich that you can make using all those fresh tomatoes (and basil) people have this time of year.

i enjoy a caprese salad; thought this was a nice twist.

i make a sandwich like this on the george foreman. i love how pressed you can get it on there

Great idea. I make them all the time, but have not grilled, will try.

The tomatoes and my basil are about the only things I like about summer.
