I don't have a recipe per say but this is what I do
Render some bacon fat in a pot and remove bacon
Brown a mix of cubed pork and cubed beef and set aside. Deglaze pot with shiner bock as I go.
Dice one large onion and an assortment of about 25 peppers leaving the seeds in 4 jalapenos
Add more bacon fat to the pot, add whole cumin seeds, diced peppers, onions, and about 4 minced cloves of garlic and cook until you start getting a little brown.
Add browned meat back to the pot and 1 bottle of shiner bock
Slow cook until tender
Ground beef is ok in a chili but I think it should be IN ADDITION to the cubed beef.
Things that shouldn't go in a chili IMO are: tomatoes, beans, and chili powder. It's a fricking chili so put chilis in it. You don't need to add chili powder.

The difference of course being that mine is more traditional
Takes longer to cook as well so I can see why some would opt for the less time consuming ground beef option

From what I can remember, that was the biggest thing I did differently. I'd have tried the pork, actually, but I already had beef... I also cut the ground meat by half and used some chipped eye of the round steaks I'd braised a bit to make up the difference. I think that and the cubed beef gives a chili more substance.
I added beans, too (about half a cup each of black and pinto), but I know you already said you don't like them in your chili, so...
The roasted chiles are a nice touch, I wouldn't skip that step...

I think most chili traditionalist would say they don't put pork in chili, brah... So, using pork in one, then saying that beans or tomato don't belong in chili comes across a bit hypocritical. In fact, I'd probably argue that beans would be a more traditional ingredient than pork. That said, I think people should put whatever they like in what they cook. Except if it's Velveeta in crawfish/shrimp fettuccine. That's just nasty...

you going to quote a wikipedia article to pass that as a traditional chili recipe yet leave out the next sentence that says tomatoes and beans are commonly included in chili?
Im not trying to win anything. it just makes you look stupid to say one thing, quote another, but strategically leave out sentence that agrees with what everyone else is saying in this thread.
