I would imagine lady fish meat is probably bloody as hell. Them damn thing get boold everywhere if you get em in the boat. Sail cat is pretty good, if you dont mind fooling with catfish, they are slimey as hell though.

If ur still in Grand Isle, try the camps by four bayou. We limited out in trout there yesterday morning. Small though...12-14" and alot of throwbacks

We are now in perdido. Shore fishing and fishing off the boat dock. I think we are going to throw away the ladyfish and give catfish cleaning a try. Mine was 4 pounds, caught it on my pink fishing pole
Any pointers for surf or dock fishing? We are using shrimp.

Without knowing the area, I say just use live shrimp and see what happens.

Last year fishing off the docks down there, we used cocahoes and caught/kept at least 30 white trout and a few specs as well. Give that a try

The Asians here in Tampa will eat them. I'll try just about anything once and I had some ladyfish last year plus I had the occasion to watch them prep them. In short they cut the head and gut the fish and then boil them. The stock was reserved for a soup dish. Using a spoon they carve the meat from the bones and place the meat into a mixing bowl. At this point they add a host of ingredients including lemongrass, pepper, olive oil, flour, and whatnot and then make patties from the meat mixture. These patties are then pan fried in a skillet. Its a lot of work and they tasted like shite. Any fish flavor was masked by the two dozen herbs and spices they added. The consistency was like a very tough chicken mcnugget.
I let them know you're better off spending your time catching fish that taste good than trying to turn this shite into something edible.
But there you have it, I've ate ladyfish..

Ladyfish are delicious tasting fish but you have to cook them correctly. First you have to cut the head off, scale them, and take out all the guts so you have a clean fillet. Then marinate the fillets in a red wine (cabernet) and red wine vinager mixture. Let the fillets sit overnight and then approx 1 hour before you cook them refresh the marinate with only milk. Broil them in butter with pepper/salt & sliced lemons on top of the fillets at 425 for 35-45 minutes depending on .
We actually cooked Ladyfish at Le Cordon Bleu in France and they were the best tasting fish we ever prepared next to southern tile fish.
