Don's Hushpuppies

A few days ago, someone was posting recipes from the Don's cookbok after the original poster was run off (being too sensitive). I was wondering if they could post the hushpuppie recipe? (if it was even in the cookbook)

I have what I believe is the same cookbook described in that thread, but I couldn't find a hushpuppy recipe in it. Sorry.

The '58 cookbook doesn't have the recipe. The '96 updated cookbook contains the following recipe.
1 pint flour
1 pint cornmeal
3 T sugar
1 T salt
2 T baking powder
1/2 c green onions, chopped fine
1/2 pint onions, chopped fine
1 t cayenne or to taste
4 eggs
12 oz milk
Mix all ingredients together well, adding milk last. Using a scoop, scoop the mixture and drop individually into hot oil and fry until the hushpuppy floats. Makes 64.
Let us know how they turn out and whether they resemble the ones served in the restaurant.

That's pretty close to what I usually do, except I add some garlic.

Wish I had this recipe last week when I fried those sac-a-lait! Did anyone ever find out what happened to the recipe thread? I'd like to have this one handy.

Here's the recipe for Ralph & Kakoo's version. They're my favorite.
This recipe looks like it makes a bunch of hushpuppies, so it needs to be cut down.
Ralph and Kacoo’s Hushpuppies
5 pounds cornmeal
2 pounds flour
3 ½ cups sugar
2 ½ tablespoons salt
¼ teaspoon baking soda
¾ cup baking powder
1 teaspoon red pepper
1 teaspoon garlic powder
1 cup green onions, chopped
4 cups evaporated milk
4 ½ cups water
5 eggs
2 tablespoons parsley
Mix all dry ingredients.
Add milk, eggs, water, green onions and parsley and blend well. Refrigerate until ready to use.
Spoon into deep fat at 350 degrees and fry until golden brown.

thank you for posting that. i love their hushpuppies but cant duplicate them to save my life.
i worked there for about five years (airline). i should have asked for a few recipes from mr. duke and ms. betty.

Thanks for posting the Recipe, Gris Gris and Stadium Rat! Might be a while befor ei do them, but when i do, i'll be sure to let ya'll know how hey turn out.
Think it'll be the Don's recipe first, because even though it makes 64, the Ralph and Kacoos' recipe sonds like it would make about 1,000 hush puppies.

I'm happy to do it if I can. I would like to see a lot more recipes shared on the site. It's obvious there are plenty of good cooks here.

I don't have a deep fryer but want to make some hush puppies? Can I fry in a regular large pot?
ALSO..
I have some fresh jalapenos that I need to get rid of ASAP so you think I could put them and cheddar in some?

black iron skillet or pot will work fine

This.
I normally fry in my cast iron pot. I have a candy thermometer to help keep an eye on the temp. (the oil really cools down when you put stuff in to fry).

Scratched the cheese altogether. Did the jalapenos and they came out great.

Good call on scratching the cheese. Did you make all 64 or reduce the recipe and did you think they tasted like Don's at all?
