I order my boston pork for all of my jamablaya cooking needs. Tim at Matherne's takes care of all of my ingredients during football season.

Get your boston butt from matherne's...they'll cut it in chunks for you is you ask. Save yourself some work.

Anywhere in Ascension Parish and the meat is usually already cut up for you unless you are cooking a jambalaya to feed like 50 people.

Pork Picnics are good to use also....but Boston Butts are a good second.

Picnic is basically the same thing as boston butt. Both are the shoulder of the pig.

Maybe not. There still is a huge pork glut out there worldwide. Pork is cheap.
And above posters: How lazy are you that you can't cut up a pork butt in about two minutes? Why pay extra? It's like buying the onions and celery already cut up. I don't get it. First its not as fresh, second it cost twice as much and third how hard is it and long does it take to cut up a few vegetables?

I buy it cut up because I generally buy enought to do a small jambalaya. Doesnt make sense to break down an entire shoulder and have to freeze it. Only costs like 2 dollars for the amount I buy. Why would I buy a 10 dollar shoulder? If Im cooking a large jambalaya it makes sense.

Without a doubt is Temple meat. Better than butt.
Gonzales grocers have it. Runs about $1.69 a lb. Its boneless and in perfect size already.

so is it really head meat? if so, i would imagine it's definitely the best but have never noticed it for sale in the grocery.
the fact that both Ascension PArish posters said temple makes me take your word for it.
