Not frozen unless you buying from a smaller store. I doubt Mathernes is selling frozen butt as fresh.

I'm partial to Manda Andoullie. The lady likes the pickled pork. Made some the other day and topped it with sous vide pork belly(60 hrs at 69 celcius) that was deep fried crispy...it was solid.
