I have no problem with a "wet" poboy, but I sometimes, or I should say I used to tell them how much gravy I wanted. Shortstop stands up well to their gravy, so does Mother's, but I don't linger over the prepared sandwich, I eat it. It is definitely not meant for leftovers.
The light, airy consistency of the bread is so delectable when served toasted. Giordando's in Metairie uses a seeded Italian bread, it is very good, or at least it was until they turned into a place, it used to be a joint. Joints are better then places, and no, not that kind of joint.
I should retract my harsh comment, but in NO, the diner can control his the way the sandwich is served.

I went to the ACME in NOLA a few years (more l;ike 10) ago before the BTR one opened, always got the oysters but decided to try some po boys and red beans. Sucked to high heaven, when we complained as soon as we said "we are from here..." the waitress instantly agreed it blows and the non shucked fare is a tourist trap and gave us our money back and said get the raw oysters which we did. Hope that's different now

The gravy that bears uses is terrible and the fries are worse. I got sick off a burger from there after it opened and won't be back.
Also agree that Georges is the worst service in town unless you are a pathetic regular.
Acme has a good roast beef poboy. I like the combo with turkey and roast beef. Roccos roast beef poboy is awesome but no longer by LSU. Poboy Lloyds has a good one downtown.

The Peacemaker is the best poboy in Baton Rouge, hands down.
Bear's actually has a very good oyster po' boy...bread is soft and the oysters are juicy. Too bad it's owned by a bunch of naive, superficial owners.

Forget Off the Hook for a Shrimp Poboy! Real expensive & the shrimp were overcooked & chewy. Copeland's has the best shrimp poboy in Baton Rouge in my opinion & I've eaten them everywhere.
