I've been using more prosciutto and pancetta to wrap the foods I usually wrap in bacon. It gets crispier without overcooking. Works especially well with shrimp, which cook so quickly.

imho, scallops and cherry tomatoes are the best. i want to try the water chestnuts though.

When I do shish kebobs I wrap cantaloupe in bacon, very tasty.
