Be sure to put a pie tin or some foil under your bird. When it starts to drip, the flare up can burn the skin a little.

No. I still put herbs under the skin and season the outside.
IMO Beer up the butt only serves the purpose of keeping the meat moist via steam.kick it up a notch by smoking the drunk chick.

I like to put about a 1/4 cup of dry rub on the outside of my bird before cooking him, get him a little seasoned up.

season the bird...maybe even inject her.....

i carve a red potato and stuff in the neck (so not to let the moisture evaporate directly thru the chicken). Not sure it has a ton of effect, but thought the science sounded accurate!

herbs and evoo work really well on drunk chickens....gets the skin really crispy

oil the outside of the can so the chicken won't stick to it as well

When my crawfish are done, I often boil a chicken in the crawfish pot. Ridiculously good.

I picked up some stands at lowes for $3 each. It is a can stand with some feet for stability. It stops the chicken from falling over on the pit.

Be sure to dump about a third to a half of the can out so it will steam. Otherwise it is too much liquid and it won't.

Do all the seasoning as above. I like to put a bunch of rosemary and thyme inside mine.

The crawfish cooker above-put it in a pantyhose and it will stay much cleaner and you can cook it with the crawfish. Refrigerate until next day and make chicken salad.

Drink 1/2 of the beer and put some thyme, cracked pepper, garlic, etc down in the rest of the beer can.

Take a bunch of seasoning and rub it all over the chicken (inside and out).

Then grill indirectly on 250 until the inside of the bird gets to about 170 degrees.
