When I have to use paper towels to sop up the grease and the crust is soggy from the grease, there is something wrong with the technique.

Downtown was marginal, but edible. The new place is just plain disgusting.

I have had slices and a whole pie. Never again.

I do like a greasy pizza but saturated with grease aint so good.

I agree. I feel like they would have good pizza if they could just get rid of all the excess grease. It's disgusting really. I was surprised they were able to open a new location after hearing so many complain how greasy the stuff at the one downtown was. Good concept. Good ingredients. Good locations. Horrible problem with too much grease.

Seeing as mozzarella is either full of milk or cheese, with expensive being WHOLE MILK mozzarella, and cheap being OIL FILLED mozzarella, I think it's safe to assume what you said is incorrect.

I worked the lines and managed many pizza places during high school and college, where do you back up your "bullshite" info?

Only that some of the best pizza I have had has had grease, and some of the worst pizza I have had does not. Maybe I have a taste for "cheap" or "wrong" cheese?

none of the restaurants that these two guys own have good food. Walkons is plain disusting, and the pizza joint is some of the worst pizzas Ive ever had.

Yet people still frequent those places, so, go figure.

They were pretty dead at 9:30 last night.

The grease is inordinate. I am not kidding that you can mop it up.

Went to the new location the other day. Pizza was so goddamn greasy that it was inedible. Service was atrocious as well.

Man, we just went there friday night. Took forever to get our food then like the op said, the grease was running off the pizza. you could pick a slice up and turn it sideways and watch the grease run off of it. We ordered a sandwich to go for someone else and that took like 45 mins to get too.

They need to get their shite straight

You realize that different amounts of grease can be on a pizza right? For most people there is a point when there is too much grease. Apparently Schlittz and Giggles has reached that point.

I agree with Jambo. Add meat to that oily cheese and you're gonna get a ton of grease. Also, their crust is EXTREMELY thin which doesn't leave much room for it to absorb much until its saturated.

If you're not using low-moisture part-skim mozzarella, you're going to get oily cheese when you bake the pizza.

I disagree

Although in most cases you're right just because of the sheer amount of cheese people put on there. I don't think pizzas need to have an entire layer that engulfs the sauce with cheese. That's just absurd.

this is the problem. they used different cheese at the very beginning than what they did when i left.

i'm not sure what they use now but it's never been good.. they overcharge wayyyy too much for what they pay to make it.
