Need a good chefs knife

What brands do you guys recommend? and where in town do you guys suggest I buy? Im leaning towards the Shun 8" Classic Chefs knife....

I have small hands and prefer a 6" knife over an 8". Plus, I don't know if I prefer a Santuko over a classic French Chef's knife for chopping veggies.

btw i dont want a santuko, already have one and dont see where they keep the veges from sticking to the knife

Just got to a restaurant supply store and see which one fits your hands the best. Chances are, you'll find a 15-25 dollar knife, that's made to last a long time and really take a beating from careless cooks, instead of spending 200 on a shun.

I recently bought a RH Forschner Victorinox - $25
Great knife, very light in the hand. I love it.

No such thing at that price. A quality knife doesn't have to cost $100 but it isn't worth the trouble to look too hard, just pick something that feels good. If you use it for six months and it wasn't the right choice, it isn't the end of the world. We're talking about a $100 knife, not a house.

+1 Bought 2 Forschner knives last year and love'em.

Great knives. Check Amazon.com for the best price and reviews of them.

Yep.There is. Dexter/Russel is probably what he's talking about and that brand is a helluva buy.

These Forschner knives by Victorinox are great buys. The were the highest rated knives by America's Test Kitchen.

If you want to pay more than $100 for a knife, you're probably a pretentious idiot.

I use a 10-inch Victorinox chef's knife almost every day, but this statement is a little ignorant. Have you ever used a Shun or Global? Spending over 100 bucks on the most used item in your kitchen is not ridiculous.

If you are going to use this knife for soft cutting (veggies) then the Asian knives with the 15 degree bevel are super sharp and will do a great job. If you plan on doing some heavy cutting(bones) then go with an American or Euro knife the 20 degree bevel will hold up better for this kind of task. Keep in mind these bevel degrees when you sharpen your knife...I have Wusthof's and have reground all the edges on the knives, except the carving and chefs, to the 15 degree edge...they glide through veggies.

Big fan of the shun. Really like the ken onion, but thats just me. The globals are nice, but I don't like the weight distribution. My s/o's mother has way too many knives. From global, shun to whustoff and henkel and all brands in between. So, I've got to use them on many occasions. she doesn't buy sets, just the individuals she likes. She has a new brand that i used this weekend, but cant remember the name. It starts with a "m" like mako or maki or something like that. That bitch is sharp! it was a small clever and i loved it.
