Eggs in gumbo

Am I the only one that cracks my eggs into the gumbo? Every time I do this, people say- what the hell? And then they love it.

you talking about cracking a raw egg into the gumbo? we don't do that but my mom will boil a few eggs on the side, peel them, and then add them to the gumbo during the last half hour or so.

yes. the egg comes together nicely and the yoke is saturated with gumbo juice making it brownish yellow rather than the typical dry yellow yoke from a boiled egg. the egg white does NOT blend in with the gumbo "juice". it all comes together.

The key is to have the gumbo boiling pretty hard and to crack/drop them on the edge of the pot.
Saw your dad making grocery just before kick off Saturday night. He was getting ready to light the pit on throw on some Poke Steaks.

We drop eggs in shrimp stew, so I'm sure they are great in gumbo, too. Will have to add them next time.

yeah, i've done that. A slow gumbo.....good way to add some extra protein and stretch it if extra guests arrive.
i'll try the other way. Just sounds like a gumbo poached egg. Can't be bad.

My mom use to put boiled eggs into the gumbo. I always liked that.

Have had Hard boiled eggs in gumbo, but not raw eggs.

Hell, I add eggs to chicken noodle soup, so eggs in gumbo, why not.

you need to try it. it's much better when you break them into the gumbo. and, it only takes about 5 minutes before it's boiled.
