Anyone ever make their own humus?

How did it come out? Looking to do this soon. Any good recipes?

The hardest part is cleaning the food processor.
Canned drained chickpeas, tahini paste, olive oil, garlic, lemon juice and salt. You will use more olive oil than you think is necessary. Garnish with paprika and parsley.

ive made it a few times, but its never as good as the greek places around here.

I have made it before as well, no recipe, just winged it. It came out pretty good, but for the work that goes into it, buy from a restaurant unless you want to make a ton for a party.

Serops in BR makes really great Hummus by any city or restaurant's standards. So unless you need a huge amount for a party, it's not necessarily cost-efficient, and you will be hard-pressed to top their recipe.
Making terrific Hummus is a bit of an artform, it's easy to get your ratios out of whack quickly, and/or consistency.

Here's what I do:
Ingredients:
1 can of chick peas,drained
3 cloves garlic
1/3 to 1/2 cup Tahini
2 or 3T. of lemon juice
2 T. parsley
1/2 t. red pepper
salt to taste(try a teaspoon to start)
1/3 to 1/2 cup olive oil
liquid from the chic peas
Method:
In a food processor,add all ingredients except for the olive oil. Blend until nearly smooth.Slowly add the olive oil in a small steam as you run the processor. The finished product should have the consistency of a thin dip and be smooth, without a rough texture. You'll process this longer than you'd think to get the texture correct. Adjust the seasonings to taste as I don't measure anything and the above amounts are approximations. Some recipes use a bit of cumin, but I don't. I do like the red pepper kick. Garnish with more parsley , paprika and olive oil if you like.

This is hard to believe.... but Sam's has an excellent hummus for about $5 per tub. Nice sized tub too.

I only make my own, the recipe above will do pretty well, although most restaurants will add a little cumin. I do mine a little differently, bt I bet its about the same taste.
One difference is I just about never make just standard recipe, I will add roasted red peppers, or sun dried tomatoes, fresh basil, fresh dill, black olives, many variation are possible and delicious.

I've found that adding a bit more Olive Oil than the recipe calls for helps out a lot.

Yeah, but it is kind of time consuming. I've only ventured down this road because Hummus is expensive and good hummus in bulk is hard to find. I grow my own grape leaves, so I figured why not..

yes...it was average. i had to add a shite ton of olive oil at the end to make it even average.

Good point. I could probably use the magic bullet (not the vibrator) for this, now. The tahini was the hard part for me, as sesame seeds are hard to grind.

You can buy tahini paste. No need to grind your own.
