Quick & Healthy Dinner options

The beau and I like to cook dinner in some way/shape/form every on weeknights. We like things that are easy yet still healthy since we both work all day. There is only so much we can do to diffrentiate between grilled or baked chicken with a veggie and a salad. We also like to make "taco salad" a lot with ground turkey meat and sans chips.

Please, if you would, throw some ideas at me. I am looking for something new to cook tonight that won't take too long or be too difficult.

some things I make:
black beans with quinoa
pork tenderloin
grilled pork chops
turkey enchiladas
chicken fajitas with low carb tortillas

Rotisserie chicken can be your best friend. Add it to salad, put some in low carb tortillas, mix it with bbq sauce and have a bbq chicken sandwich on whole wheat buns. Etc. etc.

We typically have salad on the side. We've cut out most bread, and try to choose healthier options when we do have bread.

I don't know if you read Fitness Magazine, but they have a section every month devoted to quick healthy meals. They are really easy to make, and very good (the ones I've tried at least). At the very least it might give you some inspiration.

how does pork tenderloin compare to chicken and fish healthwise? pork tenderloin is the easiest thing to make, i didnt know how it compares to the other 2 with fat/calories.

hormel turkey chili, doctor it up with some onions and seasoning and its really good and quick

I bought a ham steak that I'm going to grill this week with some veggies.

If you have access to Sam's, they have big bags of frozen shrimp, mahi mahi, tilapia, catfish, scallops, and I just recently picked up some tuna steaks. The portions of fish are usually really good and the filets come individually wrapped so you can thaw 1 or 2 at a time.

Also, to mix up your seasonings a little, I found a pineapple chipolte grilling sauce at Target that is very good, and it only adds a few calories to the meat. I usually throw a little seasalt on it first, but adds a good flavor and a little spice.

Another thing that I have heard that saves time is to marinade/season the meat before you freeze it. That way, you can pull it out of the freezer and once it's thawed it's ready to go. I haven't tried it, but I have a couple of friends that do.

Look for some dreamfields pasta next time you're at the store. It's low carb but doesn't taste like the wheat low carb stuff

Go easy on any cheese or anything like that.

I did some last night with roasted roma tomatoes. The tomatoes take a long time to roast but the prep time is almost nothing (just slice them in half and throw them in the oven on 400 for about 40 minutes)

Steamed broccoli in the microwave is a decent idea

Can't get much quicker than seared Tuna (not the cheapest thing but hey it's still cheaper than eating out and if you frick this up you shouldn't cook again ever)

kabobs are fun

mongolian beef
italian salad (more of an appetizer)
scallops and shrimp w/ whole wheat pasta


when in doubt put a lean cuisine in the microwave if you want a quick meal

i loooove sam's rotisserie chicken. the only problem is that my fingers always swell up after i eat it. i checked and the sodium is pretty damn high. i've started substituting tree dawg's chicken recipe, minus most of the oil.

Eat it once or twice a week. There's a way better version of a taco salad than using ground turkey. Carmelize half an onion, throw in a diced up tomato, diced chiles, and some black beans. Add the shredded breast meat from the rotisserie chicken and a lil taco mix (half a packet usually works for a couple chicken breasts). Throw it on top of some shredded lettuce, add some avocado and a dollop of light sour cream. Takes ten or fifteen minutes to prepare and tastes pretty damn good.

i eat it with one egg, turkey bacon, 1 slice of cheese, and open faced. salt content is a little high, but its that that bad of a meal with fresh fruit.

You're not very smart are you? That's a relatively good dinner that is high in protein and not an overabundance of calories. The key is moderation.

Actually, I've heard the turkey bacon isn't a better choice. It has relatively the same amount of fat as regular bacon and a much higher sodium content.

well my roommate is kosher and she asked me not to bring filthy pork in her fridge, so i buy turkey bacon
