Generally, I would agree on the canned, but I can't stand frozen green beans. The texture is changed in some way that I just don't like at all. Same with frozen corn. I would take canned over frozen, though fresh are so readily available, there's not really much reason to get either frozen or canned.
I will say that one time about a year ago, a gal at work brought some green beans to an office pot luck. She's smothered the hell out of them with bacon, onions and seasoned them perfectly. I couldn't get enough of them. When I asked for the recipe, she told me she'd used canned beans, which took me totally off guard.

That's what I usually do but I hate making mashed potatoes for one person and I'm trying to make non potato sides

I recently had artichoke as a side with steak. I boiled it in seasoned water, but steaming would probably work better. Dipped the petals in a butter/lemon juice mixture. Not too bad.
