There's the famed Leander Perez. How many other white people from long time families in Louisiana have Spanish last names?

Islenos have been here since the 1700s.
Many Isleno/Spanish last names have been morphed into French names.

Leander Perez was an Isleno. They are descendants of Spanish Canary Islanders. There are a lot of them in St. Bernard and Plaquemines Parishes.
There are a lot of people with Spanish names in the Iberia Parish area where a lot of Spaniards settled. Iberia refers to the Iberian Peninsula. So, New Iberia and Iberia Parish are more or less like calling them New Spain and Spanish Parish. Also, Spanish Lake gets its name from Spanish settlers in the area.
