Duke’s Alabama White BBQ Sauce

Picked up a bottle at the store last week to brush on some pork chops I was grilling. It’s a little heavy on the horseradish, but not bad. Not as sweet as CFA sauce.

Big Bob Gibson's started the white sauce thing and he did not hesitate to give out the recipe.
Buy the book Peace, Love, and Barbecue by Mike Mills. The recipe is in it and from hereon you can make your own.
The book also has the recipe for Mills' Magic Dust rub. It is unbelievably good. He was the first yankee to win the Memphis in May Barbecue Championship and did it something like three years in a row before they finally asked him to stop coming and give someone else a chance. Mills original restaurant is 17th Street Barbecue in Murphysboro, Illinois.
I took a weekend barbecue class from Mills one time in Cape Girardeau, Missouri, and there were literally people from all over the country in attendance. He was a very nice guy. He has since died and his daughter has taken over the business.

And it's still the best white sauce.

Good to know- thanks. I’ve tried a couple of premade bottles and they’re ok, but not great. I’ll definitely look that recipe up.

This is serviceable as far as store bought in a pinch.

You can purchase the original sauce here.

Have you tried the Duke's sauce? The taste is pretty similar to me. Not exact, but it's in the neighborhood. Slightly sweet with a horseradish bite on the back end.
Not the all time greatest sauce, but it's OK.

I prefer my BBQ not slathered in mayo

What do you typically bbq?
Posted on 3/31/26 at 11:44 am to GoCrazyAuburn
Chicken and Pork, and the occasional brisket

Well, if you're using the white sauce on anything other than chicken, you're doing it wrong. Some enjoy it on other things, but the sauce was specifically made for chicken.

I once barbecued a pork loin using a recipe I got from the Weber Grill Cook Book. It called for making a sandwich with mayonnaise on the finished product. Mayonnaise on pork sounded disgusting to me but since the recipe was from Weber I tried it. The sandwich was delicious.

Where my family is from in the Alabama Black Belt, most dress pulled pork sandwiches with mayo and dill pickles in addition to bbq sauce.

Not to mention it is very common to add coleslaw to a bbq sandwich.

My roommate in law school stopped with me at my grandparents in Eutaw on the way to the beach, and we had pulled pork for lunch. He was floored that we put mayo/pickles on the bbq sandwich, and my grandmother couldn't believe he put cole slaw on his. I'm thinking, "they're both just mayo and veggies"

So easy to make at home. Also not very similar to CFA sauce.
I'm done with Duke's, they support some political causes I don't go for. I can get southern mayo from Blue Plate and make my own white bbq sauce.

Like what?

The first white sauce I ever tried was a batch I made following Malcom Reed’s recipe. It was okay, but I learned to doctor up his base recipe, and improved it a ton. That’s what I use, now. I bought a bottle of Big Bob Gibson’s a few years ago and thought it was yack.

You might be confusing Duke's Mayo and Duke Energy.
