What are some of your favorite braised dishes to make in a dutch oven?

I recently purchased an oval staub dutch oven and haven't broken it in yet

I've previously made dishes like Osso Bucco or a beef pot roast. Looking for some ideas so this thing doesn't just turn into an expensive decoration and I get some real use out of it.

This has become a go to.

Also keep it really simple with other roasts. Season and sear the hunk of meat. Once browned I throw about an inch of trinity in the pot, put the meat back in, then fill with water/stock until the meat is covered about 1/2".

Maybe put some new potatoes, carrots, etc in the pot and in the oven at 350 for about 3 hours or so.

If you are a deer hunter, i have found that deer roasts do really well.

Processing your own harvested deer into roasts and then vac sealing is pretty easy.

Alternately, you can get a boneless leg of lamb at sams or costco for around $20, which is excellent braised. I like this recipe:

We do cheese grits or garlic mashed potatoes.

Try mixing equal portions of Boston Butt and Chuck Roast cut in big chunks with whatever your favorite braise recipe is.

Also try adding turnip roots to your favorite recipes. Adds some spiciness and ends up being some of the best bites in the whole pot imo.

Another thing I almost always do with braised dishes like this is to sneak in some anchovies or a few shakes of fish sauce without telling anybody in the household. They wouldn't touch it if I told them.

If you're looking for something different, Pork Vindaloo is an excellent braised dish. Serve with basmati rice and homemade naan.

I do a poor man’s short ribs using a chuck roast. Learned that from meatdad on instagram.

Turnips are a great addition when braising, or just roasting.

One of my favorite uses of my Dutch oven is to make Peposo. I basically follow this recipe -- its very easy -- and serve it with cheese grits.

Any cut of meat that has a lot of sinew an cartilage on a bone joint are great. I especially like fresh pork shoulder with a few smoked hocks included. It took me a while to learn how to limit the braising liquid to keep a nice balance between the flavor of the meat and the gravy. Sometimes a smaller pot is better.

Do you have a vindaloo recipe? I love Indian, and vindaloo is a dish we get often. But it would be fun to make it.

I have done all of these and they are all excellent. If you go to the websites most of them recommend side dishes to serve with them and I have picked up some great sides that way as well. I have a ton more that I do in my Dutch but you asked about braising specifically. Just let me know if you want some others.
