I grew up on the Mississippi Gulf Coast, my mom made it a lot for us growing up.
Poor people's food I suppose.

Poor Italian/Sicilians in LA ate spaghetti with eggs. Others ate weenie spaghetti.

This sounds like an Urban Dictionary entry.

I'm not poor and I'll devour a can of Beenie Weenie right now.

That sounds atrocious.

Y'all realize beanie weenie is beans and weenie spaghetti is pasta, huh?

Eggs were used as a protein filler. Boiled or poached eggs in red gravy, stews, red bean gumbo, etc. Grandma is feeding a family of 6 and adding a few eggs helps fill them up.

Yeah.
That doesn't change my statement either.

Nothing better than potatoes in spaghetti sauce

I’ve done potatoes in stew but never with spaghetti.

I grew up thinking chili is supposed to be served over noodles. No, just a way to stretch out the meal.

That was usually during lent or on a St. Joseph's Alter.

Weenie spaghetti is the shite. I don't understand how it's considered poor food? It costs me like $2 less than cooking a ground meat spaghetti would
.
I cook and enjoy both. My kids prefer weenie spaghetti (as I did when I was a kid).

Wrong! No meat is put on a St.Joseph Altar! What was put on the altar and eaten on St.Joseph's Day is Pasta Milanese. Not meat involved. If anything it was fish or other seafoods. And eggs were served as extra protein.

And they've run out every single year. Never thought it would be a huge hit like it has been. I think this past year was year 2 or 3 and it continues to grow.
I'm not a fan. Give me some meatballs and fresh sausage in my spaghetti.
