It’s a little nontraditional because the base isn’t all butter/heavy cream.

Rough chop 1-2 onions, 3-4 toes of garlic and 1 bunch celery hearts. Saute in 1/2 stick butter for 10-15 minutes. This batch had 2 bags of frozen cauliflower rice and 1 bag of frozen cauliflower florets, boiled in 4-5 cups chicken broth for about 45 minutes until very tender, then blended until smooth/creamy with a stick blender. Seasoned with salt, pepper, garlic powder and red pepper flakes. I added 3 small cans of drained mushrooms, 1 bag of frozen chopped spinach and 1 bag of frozen corn and cooked for another 20-30 minutes to bring it back up to temperature, then added 1 lb shrimp, (150-250 count), 1 lb crawfish tails and 1 can of whole clams. Scallops would have been delicious, too, but the wife doesn’t like them. I also added about 2 cups shredded pepper jack cheese to make it creamy. Served with toasted French bread slices. It maybe needed a little more corn and another 1lb of shrimp to get seafood in every bite, but it was very good as served.

The cauliflower soup base makes it rich and hearty looking without all the added calories of a real cream based chowder. I’ve cooked this in the past with no cream/cheese to make it a little lower calorie, but it really needs a little bit to make it really creamy and delicious. I plan to freeze some if it’s not gone tomorrow, so we’ll see how it works out.
