Why don’t the police wear bright colored traffic vests when they make traffic stops?

Laws on the books that you must move over to the other lane when an officers makes a stop. Meanwhile the state troopers in my state are wearing road camouflage asphalt grey uniforms that make them even harder to see.
If they are that concerned about strikes, why no high viz traffic vests when making traffic stops? Or is the move over law more a precaution against people steering in the direction they are looking?

When I was a training corporal, I would teach my trainees to approach on the passenger side. Your biggest officer safety concern isn't that driver pulling a gun and zipping you. Your biggest threat is the 98lb blue hair in the 4000# Cadillac waffling you as you stand on the driver's side writing a ticket.

In Florida you also have the option to slow down to 20 mph under the posted speed limit.

If you can't see the flashing lights on the car you sure as hell aren't going to notice an orange vest.
Better idea: start putting flashing lights on roadside works instead of those dingy dinky vests.

I got pulled over for speeding on a Texas interstate approximately 15 years ago. I stopped just after an overpass so there was no road overhead but still a dirt hill where the ground was sloping back down to the normal ground level. The officer approached from the passenger side but the road noise reflected off the embankment made it really hard to hear him. It really seemed to make him mad.
The next time I got stopped more recently was in a residential neighborhood. I made sure to line up my passenger window with a mailbox so the officer wouldn’t have room to stand there. That interaction was a lot more straightforward and I ended up with just a warning.
If I ever get pulled over on an interstate again, I’m going to pull way over to the right, preferably with my passenger side tires on the grass. Seems safer for everyone.

They do use unmarked cars in Europe for traffic enforcement....
