Planning a 7 day trip to Quebec City next July

4 adult couples. Any suggestions on what to see and must do?

I travel up there every once in a while. 7 days seems like a lot of time unless you are doing something more outdoorsy nearby for a majority of the time. If not, Montreal is not terribly far and worth a visit.
My only recommendation for Quebec City, specifically, is the old city / area around the Fairmount.

Great city. It reminds me of an arrondossiment in Paris. The restaurants are French, the architecture is French, and everyone speaks French. There are several excellent bistros on the pedestrian street.
Stay at the Château Frontiac, the fortress like hotel on top of the hill.

We were just there last month. 7 days in QC is a long time. You'll run out of things to do after 3 days. May want to spend part of that time in Montreal or look for several day trips.

I loved Quebec City but 7 days there feels like an eternity. We went for a long weekend and felt like we saw everything we needed to see.

Quebec city is worth 1 day, 2 days if you must. Montreal is a much more interesting city with better food. There are also some big waterfalls outside Montreal you can visit.

As said before, the area around the Frontenac. Battery Park is nice, take an afternoon trip out to the big waterfall. The aquarium is OK, it's under some major renovations but they do have an impressive polar bear exhibit.

I’ll agree with others that 2-3 days is all you need if not too much time.
There is an area 3 hours north where you can go whale watch.
I’d go to Montréal for half the trip. We enjoyed both cities last fall

Restaurant Taniere is really impressive and fun (fine dining but not stuffy)
