Hey hey Paul. Dirty rice looks great. Nice chub too. But are those oven baked meat pies? If so, smh.

I've ran across some gas stations, mostly Taliban, who try to pass off oven baked meat pies baked in their Hunts Bros pizza oven, instead of being deep fried in seed oil as God intended. It's just not the same product.

Dirty rice has to be dirty. Liver makes it dirty. Gizzards make it dirty. Anything else is likely a delicious dish, but it ain’t dirty.

225ish for just shy of 2 hour
It was 80% done (145-150°) then finished off in the cast iron, with my trinity.

Never thought about smoking breakfast sausage except when I’ve already stuffed it inside something else. Just smoking it out of the package, I can think of a few recipes this could improve. Thanks for the idea.

Agreed 100%. I actually don't like liver by itself very much, but it is crucial in dirty rice.

My Catahoula parish grandmother made chicken gizzards in a gravy so rich it should’ve filed taxes.
She made it every time I went to see them and it was incredible. She didn’t cook like the old cliche of love-she cooked with unresolved issues. It would simmer down while we did too and then we’d eat.

Bojangles does their dirty rice this way. One of my favorites sides of any fast food place. Stuff is good.
Here's their recipe:
What You'll Need
3 cups cooked rice
1 pound ground breakfast sausage
½ large red bell pepper, chopped (about 1 cup)
1 small onion, chopped (about 1 cup)
¼ teaspoon cayenne pepper (more if desired)
1 Tablespoon garlic, minced (about 3 large cloves)
1 teaspoon smoked paprika (or sweet if you want less spicy)
½ teaspoon black pepper
In a large heavy skillet, cook sausage until browned (about 10 minutes).
Remove all but about 2 Tablespoons fat.
To oil in pan on medium heat, add bell pepper, onion, garlic, cayenne, paprika, and black pepper and stir.
Cook 10 minutes or until onions are translucent and soft.
Add cooked rice and reduce heat to low.
Stir and heat 5 more minutes (uncovered).
