Costco Wagyu brisket

Went to BR location this morning to get a prime. The had Wagyu for $6.29lb. Prime has gone up to $6.49 lb. Bought a nice 18.5lb Wagyu. Trimmed it after I got home. Doesn’t look much different from prime. Anyone tried one?

I did Costco’s wagyu brisket a few months ago and didn’t notice any difference between that and their normal prime.

The big draw to Wagyu is the fat marbling. The same with prime. The way brisket is trimmed and slow cooked, I don’t see how you are going to see a noticeable difference other than maybe at the end of the flat.
Brisket is such a fatty cut of meat, I would save Wagyu quality for a more flavorful cut such as the strip loin.
At $6.29lb for an 18.5 pound brisket with a yield of about 45% after trim and cooking, you are at $12-$14 per pound for your beef. I would eat steak until the market corrects itself.

Nope. Bought one yesterday when they were putting them out and starting the cook tonight. The one I got actually looked better then the prime ones they had.
I have also noticed that as prices have gone up there is a bunch more fat on the cuts. It also happened around covid. So not only is the price up, but they have added additional weight that is worthless.

I have gotten a prime brisket or two from Costco that are too fatty for my tastes. I actually prefer a choice brisket most of the time. I am not buying any brisket at $6+ a pound, the yield is so poor its not worth it.

Most American Wagyu is Just a marketing gimmick.

No kidding. My relatives from Texas don’t even trim their briskets up. I smoked one recently without trimming it up and it turned out great. Much as tallow cost I’m surprised they don’t trim those fat caps up better like they used to.

Haven’t tried those yet. However, I cooked a Snake River Farms “black rated” Wagyu alongside a prime 44 Farms Brisket and I can tell you there was an absolute difference in the 2.
Both were fantastic, it’s just a different taste. The 44 Farms was more beefy and the Wagyu more moist and buttery.
$150 shipped for a smaller one from Snake River and about the same shipped for the large prime from 44 farms.

Speaking of steak prime filet was $32lb at my local Costco today. Choice ribeye was $18lb.

What really gets me is "wagyu burgers" but good wagyu is way too fatty to be a burger.
I watched Guga make a $100 Wagyu burger and he said it was just a waste of meat. Not much better than a good steak burger.
