That’s the first name that came to mind for me too. 3rd in interceptions, 1st in defensive TDs and top 10 in total tackles in Saints history. DROY and an All Pro. And was only here for 6 years.
Some others
Wayne Martin - 3rd all time in Saints history in sacks and 5th in tackles.
Mark Ingram - 2nd in Saints history in carries, yards and rushing TDs.
Lance Moore and Danny Abramowicz - Both top 10 in receptions, receiving yards and receiving TDs. (Not sure either is forgotten)
Hoby Brenner - 2nd in repetitions and yards as a TE behind Jimmy Graham.

I was going to take a shot at just the 2009 team or the glory years of Brees run rather than of all time (I'm younger, forgive me).
Moore came to mind, though I think he's very much memorable for Saints fans (though forgotten beyond us).
What about Jon Stinchcomb? No, he wasn't some NFL HOF great, and he may not wind up in the Saints HOF, but the dude was spectacular for the Brees-era until he retired, particularly 2009. Given he was a Pro Bowler in our best year and no one talks about him, that seems to fit "significant and forgotten" to me.
I sure forget about him a good bit until the topic or those teams get brought up.
