Wife’s 50th in Paso Robles

Wife and I going to Paso for 3 days of wine tasting. We’ve passed through once and did some tastings, but obviously I want a more elevated experience for my wife’s birthday. Y’all have some recommendations on the more highly rated, high end wineries? Boutique and personal? Looking for something that is not mass produced. We drink mostly anything. Cabs, Syrahs, Petit Sirahs, Zins, Mourvèdre, Grenache, Malbecs, Petit Verdots, Cab Francs, etc. TIA

Cypher is one of our favorites...not sure I would call it high end though. It's got a more casual vibe.

How do you do this without a designated driver? Do you actually spit during the tastings?

Oh I see. I haven’t done Paso Robles, but we got a private driver one time in Sonoma. The other time, we just did uber!

Yes - Weirdly, we had no issues getting one. And this was in Sonoma and not even Napa.
Still, the private driver is way more fun.

There is a private driver company that uses your own vehicle or rental car. It’s $50/hr, tip not included. We’ve use the same service in Napa and Sonoma too. Well worth the price!!

Yes.
We spent a week in Paso Robles a few years ago. We were there when Hurricane Ida hit because we went there before the LSU - UCLA game in Pasadena.
We really enjoyed Paso Robles. It is a smaller, and more laid back and countryfied version of the Napa Valley.
If you are looking for a small, boutique winery, I will direct you to Calcareous. We had a nice lunch there in addition to a short tour and a long tasting of some of their best offerings which were exceptionally good.
You said you don't like the big wineries, but Daou is a must see. It is in a beautiful setting at the top of a mountain with views below of the sloping vineyards. They have a nice bar and tasting facility with the same view. We scheduled a tasting and stayed for several hours having lunch, then another tasting of some of their premium wines conducted by the bartender. If you join their wine club and order wines, the tasting is free or discounted. You have to be on the reservation list, otherwise they won't let you just walk in.
Justin is another big winery with a nice bar/tasting facility which includes an outdoor terrace.
Donati and Turley are a little outside of town, but well worth a visit. They are right across the street from each other.
The town itself is very compact. We stayed at the Paso Robles Inn right on the Square. There are some very good restaurants there and everything is either on the square or within a block or two of it.
BL Brasserie
La Cosecha, and
Il Cotille
were three of our favorites along with the rooftop bar at the hotel right around the corner from ours.
We had a great trip except for two disasters, watching Ida hit on TV in our hotel room, then the football game.

The Eberle Winery is very nice. The owner, Gary, is usually there. He played football at Penn State and got a masters degree from LSU. I think he is also considered to be one of the pioneers in developing the wine industry around Paso Robles. My wife and I took a side trip one day from Paso Robles to Cambria and Cayucos. I highly recommend taking a break from the heat of Paso Robles by driving 25 miles to the Pacific and enjoying a 25 degree drop in temps.

My wife and I were introduced to this amazing wine through her cousin in California. Small, boutique winery where the owner did the tasting for us. The name is Pelletiere Estate Vineyard and Winery.
Also, we went to this place one night where there is this amazing light show where you walk through fields of LED lights. It was pretty awesome, as well.It is called Sensorio Paso Robles.
The town square in the evening is lively, good food and drinks all around.
