I love bobcats. We've had a shite ton on our property for decades. Still lots of turkeys and deer, rabbits, etc also.

Grind it or pull it and make tacos/carnitas? Or smother it and make a gravy?

One of my buddies made a really lean tasso with it. Was good in beans.

I've eaten it. I can confirm it's pretty tasty.

Big cats are fascinating. Bobcats are about the biggest you can have roaming around without worrying about getting got. I kind of like having them in my neck of the woods (I don't hunt turkey )

Either way. Where I live in South Texas we really have a large population of bobcats. I have 10 acres in the middle of nowhere where I have my house and we raise rabbits, chickens, and also hunt on the property so I am constantly predator proofing, trapping, and predator hunting. My favorite way is making breakfast sausage out of it. I order the mild sausage seasoning from Rebel Butcher out of Pearl Mississippi and grind it up with bacon ends and it turns out good.

Besides herbivorous ungulates, hooved animals (hogs), and bobcats, what other kind of critters are you eating? I never heard of anyone trying to eat a coyote but is that a thing?

Had one come out a few years ago about 150 yards down the pipeline while deer hunting. I started screeching like a wounded rabbit and the cat walked all the way up the hill to me and walked right under my stand. I got the whole thing on video.

Pretty cool experience to say the least.

I drew the line at Coyote and Opossums. However, I had an older Hispanic gentlemen that I worked with that swore up and down that Armadillo tasted great, so I thought I had to give it a try. Surprisingly, the armadillo tasted really good.

Accidentally hit the red arrow. Sorry and hit the green arrow but didn't erase the down vote. I am a dumbass.

I ate a couple of armadillo hot tamales in Zwolle once. Didn’t care for it, and I love hot tamales. Left an aftertaste I couldn’t shake. Or maybe that was just my imagination.

I never put much thought into it... but now that I have, I think that sounded exactly like two pussies fighting over some pussy would sound like.
