Pompano recipe

Caught a nice one at the beach in Gulf Shores and have never cooked one before. Any suggestions would be appreciated. Thanks

We LOVE pompano. Grilled whole with lemon butter. Take your knife and score the top side a few times so the butter gets into the meat.

Best pompano I've ever had was at Lusco's in Greenwood, MS. They served it with a "fish" sauce that was great. Wish I had the recipe.

Gut, score, grill with butter like others said. Meat around the head is fantastic. Skin is good too. It will look like Sylvester the cat ate it when you are done.
