Smoked pork belly “burnt ends” on the Weber.

Ribeye and chicken cheesesteaks on the blackstone.

Assorted dips and libations.

Only smoked pork butt and meatloaf. Tons of food though

Philly cheesesteak queso dip
Quac and salsa
Spicy bacon crackers
Boiled peanuts
Meatballs and weenies in bbq and grape jelly

Pigs n a blanket
7 layer dip
Choc chip cookies

Just took a brisket off the smoker and have a pan of potatoes au-gratin in the oven and made some homemade rolls earlier today. I'll steam some fresh broccoli to round it out.


The wife air-fried 10 lbs. of wings yesterday evening and we had some leftovers to munch on today as the other things cooked.

Super Bowl appetizers. NuNu's Fresh Market-Youngsville boudin, Cajun Meat Market jalapeno and cheese deer sausage, & bacon wrapped backstrap (half with cream cheese/jalapeno, half plain).

14lb prime brisket. Put on smoker at 6 this morning. Ran it at 275. Stick burner with post oak for the win. Took 9 hrs. Pulled it at 203 and let it rest in my bbq blanket for 2 hrs. Turned out excellent. Just sliced it

Took the trimming and cut up. Put in a foil pan on smoker for 3 hrs. Took the liquid gold and put in the wrap at the end. Nothing like fresh tallow.

I didn't grill, but I did fry up some of the crispiest wings I have ever had. I was inspired by Meat Church IG reel.

Fry naked wings for 20 minutes at 200 degrees. Remove, and set aside for 1 hour. Heat oil up to 400 degrees. Fry for an additional 10 minutes.

Toss in bowl with VooDoo seasoning, after a light spray of canola oil.

Simple, and delicious.

Not grillin. Will be at a buds SB get together (34 years in a row) and will once again enjoy the annual tradition of beef stew over rice. a-hole and prostate will suffer tomorrow but always great seeing all the old farts I grew up with.

Smoked a tri-tip to bring to the party that featured chicken strips, some kind of delicious chicken & sausage pasta, buffalo dip and some very grainy Rotel dip. Not sure what cheese was used, but it was not very good.

Tri-tip was a huge hit.
