I hate that $80 for a brisket is now considered a deal.
We used to pay .29 a lb... Because no one wanted it

The problem is every time they run this deal all they have is giant 18-20lb briskets.

And flank and skirt steak were the same way. Cheap bc no one ate them. Then fajitas came along…

That does suck, but I have passed on the last few deals due to this.
May finally get one, cook and vacuum seal leftovers. Sous vide warm up and almost like they just cam off the pit!

Then cut it up and use it for different purposes. You can season one overnight and toss it on the smoker, brine one and use it to make pastrami by smoking it or boiling it to make corned beef.
Or you could simply season some of it, wrap it in foil, put it in a pan and bake it low and slow in the oven.

Not ideal to smoke but you do get a greater yield.
FTR, we not only slice some but use it for brisket sandwiches, tacos, enchiladas, in scrambled eggs, and in baked beans. It flavors better than bacon IMO.

has anyone tried asking the butcher to open the bag and cut in half?

Yeah, and a whole 100 lb. sack of oysters was $10, a hamper of crabs $15, fresh caught shrimp $.75 a lb., blue jeans $4.50, full size pickups $3,500.
We don't live there no more.

The last time they were on sale, I was going through the case trying to find a smaller one and the butcher walked up and asked if I needed some help. Told him I didn't want a giant brisket that would take 16 hours to smoke. Said he'd go look at what he had left in the back. He did that and came back with the bad news then offered to cut one in half for me.
Went home with a giant chuck of fatty that day. So yes, they will cut 'em for you.

8-10# of flat at 4/lb is a great deal

I agree...it is...but I want fatty AND lean on my plate
I just enjoy smoking a whole brisket.

Yeah, but garbage meat and bottom feeding shellfish shouldn’t cost the bank.

We must have been talking since I've got a brisket in the fridge seasoned already to go on the smoker early tomorrow morning to be ready for the game.
