Quesos Cheese at Ninfas/Tio Javis?

Anyone know what brand/kind of cheese they use to make thier quesos? The menu just says Jack cheese, is just a hunk of monterey jack thrown in the broiler?

There's a specific queso cheese they buy from their wholesale supplier. I forget the name.

Queso panella maybe. Any good, tangy Monterey Jack will do.

Nope. It's like a taco with chicken/steak, onions, pico and a tangy, thick cheese that they assemble table side with spoons. The main ingredient is the cheese. It's excellent but an absolute calorie bomb.

It is like a burrito rolled up with cheesy goodness inside as said above. It is insanely good.

Possibly Queso Oaxaca. The table side dish they assemble is great, and a meal in itself for a couple of people. I think its listed as an appetizer.

Most Mexican places use white American cheese that is melted down in half and half. Add a little cumin and chili power as well.

I think you are right about the cheese. Other places call this dish queso fundito or queso flameado and most of the recipes call for queso Oaxaca aka Mexican mozzarella.

Used to get their steak fajita queso and share that with the wife + 2 margaritas. I was out the door on a date night for about $20-25.
I can still remember how they put all the meat, cheese, veggies,etc into the tortillas with two big spoons. It was so damn good, but greasy as hell!
