Prime rib smell

Got a frozen prime rib from a farm not too far away. First thing I noticed was a different smell to it. I wouldn’t call it a “bad” or “putrid” smell, just an odor I’m not used to with meats. I thawed it in the fridge and then brined it. Still has the smell. Gonna sear it and finish it soon and I guess try it. Anyone have any experience with this smell I’m smelling?

Beef smells, especially beef blood. Food lets you know when it’s bad when it smells bad. Are you smelling that normal beef smell or are you smelling bacterial growth? We can’t answer.

I can’t really answer either tbh. I’ve cooked a few prime ribs in the past and none had this smell. I would be very surprised if this company packaged and froze a bad piece of meat but I suppose stranger things have happened

do you know if it's grass fed or not? Sometimes, grass fed beef has a gamey or stronger aroma than grain finished beef.

Was is stored in vacuum sealed plastic? Wet-aged beef can have a different smell to it.

The meat wouldn’t have been bad when processed and packaged from a processor. It would have “turned” between there and your freezer.

Cooked and tried it. The smell is in the taste just a bit and I’m gonna toss it. Shame.

Yep. I'm not a fan of grass fed beef, but grass fee/grain finished is a big yep.

I don't know why people are downvoting you. I agree that raw beef has an awful smell. To me, anyways.

I will say the same for flounder. It's like a urine smell, like ammonia, cat piss, very offputting. But once cooked, chef's kiss. It one of my favorite fish to eat.

I will agree with you on beef, especially grass fed beef.

I've heard that from others as well, must be some compound that only some people can smell. It's completely absent after being cooked though, and flounder is still one of my favorite fish. In fact, it's my favorite inshore fish and it's all I target now when I get a few opportunities a year to get to the coast.

I wonder if those saying flounder has that pneumonia smell are talking about flounder fillets purchased at a grocery store.

I’ve never noticed that smell in flounder I’ve caught and cleaned.

I smell it in flounder I have personally caught and cleaned.
