My wife and I try to get 1-2 1oz cannisters of Caviar for New Years Eve as an indulgence to end the year (don't really ever eat it otherwise).

We usually get one tin of Royal Osetra and then another less expensive one depending on what is available.

Does anyone else do it or get caviar regularly? What do you enjoy? Where do you get it from? What accoutrements do you usually pair with it?

We've used Fresh Market, occasionally they have really good sales on caviar.

We usually do Whole Foods for the same reason. They have a sale every year in the days leading up to NYE and sometimes on NYE increase the amount off.

No but this sounds like a good idea to go with what we usually do, which is get a couple of expensive aged cheeses to snack on.

I love Caviar. My parents have it all the time and I always get a bump when I go over there. I like Tsar Nicoulai and it's not crazy expensive. I really like their Osetra and their Beluga Hybrid. They have one called their crown jewel that is good and has great color for presentation. It's a good bit more expensive though. The reserve is good too, and you can normally get it at restaurants.

Marky's caviar has some good ones as well. They have one made from an albino that I want to try.

Petrossian is kind of hit or miss for me. They have some good stuff and some not so good stuff. Their Baika is OK and you can get Classic for around $70/oz.

As far as accoutrements i normally just take a bump or eat it off of a spoon. I will eat it on Blini sometimes.

Pretty much always online.

I assume you mean the Kaluga with this comment?

What do you prefer the Osetra or the Kaluga?

We typically do Whole Foods, but I really want to get into trying others. Last time we did Caspian Sea Osetra and Blister Golden Osetra.

We do blinis, red onion, creme fraiche, chives, microgreens, finely mince egg.. I think that’s all.

Usually have it with other chilled items like seafood or dips to make it more substantial.

I’ve since gotten some nice dishes for it.

Serious question…. How do you eat caviar?

Like straight caviar…. On crackers….what?

Never eaten it so I’m curious…

My wife wouldn’t touch fish eggs until we went to a restaurant in Paris that specializes in the best and most expensive caviar out there. Then I had to rein her in, telling her that that was not peanut butter they were serving her on those pearl spoons.

Traditionally on blinis…but it’s better on a fried potato.

Nice setup! We’ll splurge on a caviar order during the holidays when the kids are home. Fun times. We’ve ordered from Petrossian, Caviar Star, and likely others.

Easy way to serve a larger group is to take a block of Philadelphia cream cheese and score ridges into top with a dinner fork. That helps keep caviar in place. Then pile a half inch layer of caviar on top. Display on serving platter with a cheese knife and whatever toast/cracker you want.

More complicated way to serve a smaller group is to make blinis.

Once or twice a year I get a jar of whatever is on sale at Whole Foods. If near Pensacola I buy a cup of salmon roe at Joe Pattie's, but the quality varies. If in NYC I do the same at Sables and the quality has always been consistent LINK They ship.
