I don't get to travel as much as some but I try to pick one big trip a year. This is for two people with similar interest who've done Belgium, Holland, Italy, Germany, and London
- Hawaii: 20 days during Christmas to see the surf/whales
- Prague: 14 days during Christmas to see the Christmas village/New Years
- Australia: 12 days during April because the weather is supposed to be great plus I've never been and it is a bucket list item.
- California: 22 days traveling from San Diego to Sacramento
- Ireland/UK: 14 days during June/July following family history
I'm open to other suggestions but right now the S/O is just, "whatever I'm fine with a y of these" and each one has some positives and minuses for me.

Australia. Stay here:
Thala Nature Reserve, Port Douglas
You can spend a few days in Sydney or Brisbane then fly up to PD.

I would travel as far away as you can if you have the opportunity
Sounds like you’ve had a good run through Europe, and California isn’t going anywhere anytime soon, I would do Australia while you have the chance

Sydney is great. I stayed at a crown plaza at coogee Beach. Nice trail there all the way to bondi beach. Sydney is a great beach town. Take ferry over to manly to their great beach. LINK

Prague sounds fun.

I’m with your S/O. They all sound great.

There is zero chance I’d pick Australia for 12 days over the other choices. 17h55m to Melbourne from LAX. It was about 24 hours of travel time each way from IAH, and you didn’t mention New Zealand.
As an alternative to Prague, why not Croatia etc? I don’t know if you watch the grand tour, but their multi country trips in Europe can be an amazing travel map.

IMO, 14 days in Prague to see Christmas Markets and other sights is excessive.
We went earlier this month and saw plenty of the markets and most other major sites in Prague in 2 days and 4 nights (on top of a day trip). You will want to go all over Czech Republic, or maybe to Prague, Vienna, and Krakow in that amount of time.

Been to Prague and Czechia 3 times. One of my favorite places in the world!
Start in Prague. Hire a driver or rent a car and go to Ceský Krumlov. Stay for a couple of nights. One of the most magical small towns you'll ever see.

Hawaii is so overrated. My family prefers the US Virgin Islands over any other beach vacation, specifically St John. The beaches can't be beat anywhere in the world. Rent you a house for the week and just enjoy a nice relaxing vacation. Why spend 7-10 hours on a flight when you can be in the Virgin Islands in about three?

20 days for Hawaii sounds a bit long. Could you do 20 days in Australia instead?

This. Australia is a 3 week trip IMO. Particularly so if you add in some New Zealand (which you should).

This. Prague is a 3-4 day town max to see 80% of the highlights, add in another 2-3 days if you want to do it all. Never been to other parts of Czech but I would recommend heading to the hills if you go
BTW I agree that Australia is probably the best option of what you have listed

I would add we took the train later from Prague to Krakov in Poland and stayed for 5 days. Great city. Going to see Auschwitz was a must see.

Hawaii gets small so I don’t know that you need that much time. However it is a great time zone to work remotely from.
I love Ireland, Northern Ireland, and Scotland. I love the history as well.
Did New Zealand for a week. I loved that but 2 weeks / 12 days would be perfect to see both north and South Island. I will say we had a Delta One first class seat there and back. That drastically changed the jet lag.
My boss is in Asia right now doing 3 weeks in Thailand, Cambodia, and Vietnam. Very different that your list but he says it is cheap and is loving it.
Have you considered anything like an Antarctica cruise? Friend just did it and loved it.

I'm a big advocate of doing challenging trips when you are young and healthy and saving the easier stuff when you are older.
Taking a river cruise to see some Christmas markets or lounging on the beach chairs in Hawaii is wonderful but it's also right in the wheelhouse of the "too old for this sh*t" crowd.
Take those 20 days in December and make the leap to Australia or New Zealand. Or do the extended California trip in summer and get some hikes in.

Yeah Asia is the goat, there is a reason it's #1 for tourism year after year. Cheap, fun and great weather. Although Bangkok is far from cheap anymore.
Heading back to Thailand in a couple of weeks for the 3rd trip there in the last year or so. Stayed over in Seoul last trip and Hong Kong this time.
