Herbert's Turducken Baton Rouge?

I am attending an event in Atlanta on Saturday and I have been informed the main course is a Turducken from Baton Rouge.

What should I expect?

Have you ever had turkey? Have you ever had duck? Have you ever had chicken?

It will be exactly like that plus whatever stuffing.

It’s a novelty. It’s good, but it’s not some culinary masterpiece.

I'm told it's from "Herbert's" in Baton Rouge. Is that considered a good place to get these things?

I didn’t know there was an Hebert's in Baton Rouge.

But the original Hebert's in Maurice is the OG place to get these things

Bunch of Atlantians probably just using the nearest point of reference. Hopefully they don’t mess it up. They can be tricky.

It's not Herbert's, it's Hebert's. And it's in Geismar, not BR.

Heberts is pronounced A Bears which is French. Their boneless stuffed chickens are the real deal. I agree with what is stated above, if cooked properly, that turducken will be a real dining/eating experience

I went through a turducken phase. Shipping one from Hebert's to NY state ran about $200! In order to ship interstate, it had to be made in a USDA-inspected plant...in Oklahoma at that time.

Due to the size of such a chunk of raw poultry it is critical that it be fully thawed and cooked low and slow as per instructions. Hopefully a thermometer will be used. Mine were too hot to slice for a full hour out of the oven.

There are choices as to the stuffing between layers. All are good, some are hot.

Trying to save on costs, for a few years I assembled my own turducken, travelling with good knives and poultry shears. That worked OK but was a lot of hand labor. For the last few years, I just separately cooked a 15 lb turkey and a 5lb duck both spatchcocked. Feeds 15 with little leftover.

They sell them at Robert on Highland. There is a whole freezer section of Herbert’s items.

Exactly. The original is in Maurice but they have a location in Geismar.

Bump.


Had their deboned stuffed chicken over the weekend and it was very, very good. Will be trying another one soon.

The gravy from the Turducken is definitely a culinary masterpiece.

This turned out to be what we were actually served, not turducken. Stuffed with boudin. Might be the best chicken I've ever had.

I love the chicken stuffed with eggplant and brown rice. It sounds like an unusual combination, but it's outstanding.

I've been putting a rack over the baking dish and sitting the chicken on the rack to bake. In the dish, I slice up some onions and put a bit of chicken stock in to start to catch the drippings. About halfway through, I heat more stock and add it. I make a little gravy with that. It's especially good over the rice dressing stuffing.
