Where in Baton Rouge can you buy animal parts, such as hog's head?

I recently wanted to try making hog head cheese the original way, by using the hog's head, but I don't know where to buy it. Does anyone know where you can buy this, along with other fresh Offal?

Try Scallan’s on Airline. Last one I bought was from north of Zachary. I can’t remember the name of the place.

More than likely, most offall will be frozen, not fresh.

While at it, but a few "trotters" aka the pig's feet to add more collagen so it sets better when chilled.
I was up in Mansura, La. a couple years ago and got 2 heads and 6 trotters and made my own hogshead cheese and it came out fine.
If you can't find a head, you can substitute pork shoulder with trotters to make it that way.

Try La Morenita ok Florida. You can see in the back there and they have always cutting up hogs. You are going to need to know how to ask for it in Spanish though.

Many people today are using Boston butt to make head cheese. (Including Jerry Lee's) Does it come out better making it like this?
