Maxwells is the easiest. They will have chops cut but if they are not the size you want, you can ask them to cut you what you want.

Buy a pork loin and cut them as thick as you want.

Alexander's, specifically in Gonzales, sells a double-cut, French-cut pork chop.
The Baton Rouge store off Highland at Old Perkins Road may do the same, as I know the Gonzales store cuts them specifically.

Kroger has 1.79 pork loins on sale right now… just cut them to desired thickness. Got a 3lber last night

May I suggest for char siu, use pork sirloin, or shoulder cap. Loin is too lean imo for the recipe.

I don't like how Fresh Market has their meat counter set up. Everything's underneath the same glass, uncovered. So the meats and fish pick up the scent and taste of whatever smells the strongest.
Fresh Market also has the worst employees of any high end grocery store in Baton Rouge. They're the grocery store employee equivalent of a Wendy's. And there's not a pork chop or rotisserie chicken on this earth worth suffering through an interaction with them.
