What game do you always keep installed?

For those with a ton of storage, this a moot point, perhaps. What I mean is what game do you always go back to even if you're in the middle of a playthrough of another game. Something that always delivers.
Mine is Fallout 4. I have this at the ready at all times, if I'm not feeling anything else, I can hop in for a night or two, loot some buildings, and it's always perfect. A warm blanket when games like Elden Ring are treating me poorly.

Skyrim and Fallout 4
It's a little bit easier to mod now with Vortex but I've always hated having to redo the script extender so I just kept them downloaded.

I have a tremendous amount of space, so the actual answer would be a couple dozen plus games, but more in the spirit of the question: Mass Effect LE, Dark Souls Remastered, Age of Empires II DE.

Red Dead 2. Because sometimes you want to feel like a cowboy on a random Tuesday

Now that you mention it, it's the exact same for me. I always seem to go back to Fallout 4 when I start getting bored of anything else I'm playing.

I've recently switched most of my playing to the XBOX-X with the extra 2TB of memory so space isn't a problem.
On my PS5 it was typically a sports game...NBA was the most recent and took up something ridiculous like 150GB. I would usually move other PS5 games back and forth to external storage as needed and hated it.
On XBOX it will be a couple of sports games (NCAA and The Show) that I can jump into for 30 minutes or so when time is limited. I'm also addicted to the PowerWash game and can put on a podcast and get lost in that for awhile. But with all of that space it will be easy to keep up anything I'm remotely interested in for a long time.

Fallout 4 but mainly for settlement building. I do still find new things sometimes though.

I always see videos of this and think "maybe I'll try it now" but I don't have the patience.

That's where mods come in handy.
