If you're talking about real Wrestling, it is Rulon Gardner's upset of undefeated and un-scored-upon Russian Aleksandr Karelin in the 2000 Olympics in overtime.
This is possibly the greatest upset of all time
Not sure about the fake stuff but I'd say the Undertaker vs Mankind 1998 seems like a good starting point
