I like more bell pepper personally.

1 large / 2 small onion, 2 bell pepper, 2-3 celery stalks.

This thread went similarly to the family discussion I mentioned in the OP... Lots of variation. I usually put more onion than bell pepper or celery, but I'd enjoy a gumbo with any ratio mentioned in this thread.

However many onions I use, I use the same number of bell peppers. Celery varies depending on what I’m feeling.

I dont measure too much, but normally two medium onions, three stalks celery and a large bell pepper.

The classic French trinity is 50% onion, 25% celery, 25% carrot. For Cajun trinity, same ratio applies with omission of carrot & addition of green bell pepper. Red, yellow or orange bells are sweeter & different flavor profile from green, which is more bitter. The poblano has some heat to it that green doesn’t have. I would not completely swap out the poblano for green. The smell of darn roux and Cajun trinity reminds me of my childhood and Louisiana. I’ve moved to other places & that smell rushes me back

I am like your aunt less bell pepper equal onion and celery. But it also may change with what I am cooking sometimes. I personally do not like cooked bell pepper so I may be biased!

I like less onion, my wife likes less celery and bell pepper, and I also usually add garlic, so the chopped piles look more like 1-1-1-1. And I may use non-green bell pepper.

If I'm making a soffritto, I use the above and add enough carrots to make it 1-1-1-1-1 then cook that down in olive oil.
