Help Planning a Quebec City Trip

We'll be there during the first half of March and it'll be our first time so appreciate any good tips. Our party is 4 adults and we're staying at the Fairmont.
The first night we'll eat at Le Sam at the hotel since we don't get in until late. But I need recommendations for 3 other nights. Based on online reviews, places we're considering are: Chez Boulay, Chez Muffy, Battuto, Kebec Club Prive, and Chez Rioux & Pettigrew. Open to other suggestions. We're pretty adventurous eaters and appreciate good cocktails. Also, if you have any good lunch spots.
Couple more questions: We're not renting a car; is it worth going to Ile D'orleans by taxi. If we did, it would just be to do beer/wine tastings and lunch.
We are planning to go to Montmorency Waterfalls and StrØm Spa Nordique. Any suggestions around that are appreciated. Other than that, we've booked the Old Quebec City Food Tour and plan to visit the Museum of Civilization. Any other suggestions, please let me know - Thanks

If you are staying at the Fairmont Chateau Frontiac you are staying at the right hotel. Great place.
There are a number of French bistros on the pedestrian street that make you feel as though you have been transported to Paris. One was Le Lapin Sauté.
We really enjoyed Quebec City.

Montreal/Quebec City are so high on my list, I will be paying attention to this

Ile d’Orleans is a worthwhile trip. We just rented a car for a day. Explored the whole island at our leisure.

Great place to stay. Smoked old fashioneds in the bar are a must.
