Lots of good rec's in this thread. In addition to Diamondhead, Pearl Harbor and the Polynesian Cultural Center, I'd add the Dole Plantation and Duke's on Waikiki (especially for a weekend brunch). ...

When we visited, they had a kind of scavenger hunt for the kids to help them get engaged by finding things along the tour. I don't know if they still do that....

Depends. Is your priority to see the alps or head to out to Bavaria? If alps, Geneva is your best bet. There are great spots along Lake Leman. Recommend Montreaux (they have a month long Jazz Festival in June/July), Gruyeres, Vevay, and you aren't to far to cross into France to see Chamonix/Mont ...
