Onions in soup are crunchy. Best way...

Didn't sautée the onions enough in a shrimp soup last night. Should I remove shrimp and reheat on the stove or should I microwave it? Trying to cook the onions but not damage the milk/broth liquid.

Certainly remove the protein, but the rest depends on the type of soup/broth. If you want to be extra careful, strain out the onions with a slotted spoon, give them a quick rinse, then toss them in a pan with a touch of oil until they have the consistency you want. Then just add them back into the soup.

I did consider trying to remove the onions and cook. Thought I was overthinking it. That might be the best way

Check them today. They may have softened a bit sitting in the broth if you did this last night.
You could also remove the shrimp and give the soup a whirl with your immersion blender.

Just eat it like it is and make another batch tomorrow with onions that are cooked longer.

Freeze it in zip lock bags and reheat and eat another day. The onions will be soft because of freezing and reheating.
