How does cracklins not have carbs ?

With the oil they fry them in

I know the cracklin itself don’t but how many carbs are in a half pound order at a place like best stop

Lard fried in lard, IDK where the carbs come from.

Some places put a tiny bit of sugar in the seasoning. No carbs in pig or earl.

Fat =/= carbs

This. I cook my own cracklins' and I'll start them with just a tiny amount of oil coating my pot so they don't stick with the initial cooking process.

They render their fat as they cook. Start out with 6 lbs. of pork belly and a few tablespoons of oil and by the time they are done, you will have less than 2 lbs. of cracklin and a lot of oil in the pot.

Did this mean they're considered confit? I often have a hard time figuring out confit as just a form of frying....
