Water heater pilot light goes out ~3 weeks

99% Thermocouple 1% gas valve. I’d start with the thermocouple it’s cheap and a easy diy job

Usually 2 things:

The air vent in the bottom may be clogged and restricting air.

Or the thermocouple

On the off chance the OP isn't paying attention. Also, I'd call a plumber before an AC guy for a pilot on a water heater.

Just had this issue and called out a plumber assuming it was a bad thermocouple.

He came, lit it and it’s been fine.
He said several types are sensitive and rain will go down stack and trigger the sensor.
Once it dried out, it was fine.

The flame size on many pilot lights can be adjusted. If the flame is too small, this could be your problem. The flame should be about 1/8" to 1/4" below the tip of the thermocouple. To adjust the amount of gas going to the pilot, there should be an adjustment screw near where the pilot light gas line connects to the gas pressure regulator.

The flame should be mostly blue with some yellow color.
