The issue seems to be that,since Hunter is the subject of an ongoing investigation, more charges could follow and an immunity deal is premature at this time. That seems reasonable.

I'm not about to spike the football, because certainly this judge will be subtly reminded that herself and her family might all just decide to commit suicide simultaneously by two shotgun blasts to the back of the head each, resulting in an abrupt show of sympathy and leniency towards Hunter... But...
I have to say, I was expecting far worse. Not embarrassed at all to say that I would.

I thought they just postponed everything and agreed to re-work things, so immunity could still be out there, right? This whole thing does not seem like it's over.

From the last I read, that attempt at total immunity is what's shot his plea deal down. The defense was trying to frame it as total immunity from all crimes committed during that timeframe (which would then include the FARA violations). The prosecution seemed taken aback with that interpretation and the judge seemed to signal "not just 'no' but 'frick no'".
Basically, just like the lawyer who called posing as a Congressional lawyer to get the amicus dismissed, this group has no problems trying to risk things which otherwise might risk disbarment in order to protect the Bidens. They seem to be back at the negotiating table with the prosecution, but it looks like the deal will be vastly scaled back to covering just the tax evasion, the gun charge and the drug violations (meaning that when they go after him for FARA, coercion, etc. they won't have to worry about possible double jeopardy).
