In addition to the above mentioned things, you could do a swamp tour.

Good things listed so far.
In addition with the City Park activities, there is a Cafe Dumond out there and it's much nicer to visit that one vs downtown at Jackson Square.
There is also a 36 hole mini golf course out there as well as bike(multi person ones too) and paddle boat rentals.
My only additional advice, is to try to do this sooner in the summer if possible. It will be getting hot as all hell soon.

the insectarium/aquarium is combined now and it is open
zoo but like other said, it is about to get really hot but they do have a water feature and areas but they may be too young for that
mardi gras world is inside and might be worth it
go to hansen's and get them snowballs

Sea Cave- during the day it is a kid friendly retro arcade.
Second line - will have a bounce house inside on most weekends. If not they can throw rocks on the train tracks.

Dodge bullets while teaching your kids not to make the same poor life decisions as the homeless crackhead on Bourbon. Then take them by City Hall to show them crime does pay.

Lots to do with young kids. It’s hot so book a place with a pool for the afternoons. Most people have covered the main things - zoo, aquarium, storyland/carousel gardens (my favorite), children’s museum, street car ride, snowballs.
I’ll also add the music box village. It’s a really, really cool place for a 4-6 year old to climb around and bang on things.
Ride the ferry to Algiers, eat at tout de suite and ride back. Kids love taking the ferry across the river.

When I was a kid, my people would take me to the Mardi Gras Fountain. Is that still a thing?

It’s still there. Did y’all use it like a trailer park pool or something?

No. They would drive us there at night to see the lighted fountains. We didn't visit often.

Ok.
I’m not sure if there are lights anymore.

It’s more like a nursing home

Insectarium and Zoo.
The WWII museum is phenomenal. But they are too young for that.

If y’all take the ferry across to Algiers, grab tacos/margaritas at Barracuda…it’s a converted gas station across the street from a shaded playground at Confetti Park. Can take the tacos/queso/etc there as well. It’s a couple block walk from the ferry landing.
