what to do with lemons

just moved into a house with a lemon tree.
got a sit load of ripe lemons.
any suggestions besides lemonade?

Avgolemono Soup, incredibly good on a cold day.
1 Quart chicken broth
2 Tsp Olive oil
1 Onion chopped fine
1 Bunch green onion
1 Carrot grated
2/3 Cup Rice
2 Lemons juiced
2 Eggs
2 Cups hot water
Fresh dill if available
Salt/Pepper
Sauté onion in olive oil till tender, about 10 minutes, add chicken stock, carrot, rice, salt/ pepper. Let simmer till rice is tender, about 20 minutes. Add green onions and use hot water to correct volume, just add enough to get a soup consistency. Combine eggs and lemon juice and whisk, then add some hot soup to eggs slowly, till they blend together, about 1 cup. Add egg mixture slowly into soup, stirring constantly so eggs don’t curdle. Correct salt & pepper, add dill and serve.
Nice additions to recipe, chopped chicken, asparagus tips.

Squeeze them in your eyes.

Squeeze juice, put in ice cube trays, after they are frozen hard take out of trays and put in ziplock, repeat. Any time you need juice take out a few cubes and mely

Preseved lemons are great in salads, chutneys, tapenades, Greek and Middle Eastern cuisine. And jars of homemade preserved lemons make great Christmas gifts too.

Give them to friends. Homegrown lemons produce about four times the juice as storebought ones.

John Folse Best Damn Lemon ice box pie
1/2 cup fresh lemon juice
Zest from 1 lemon
3 egg yolks
1 can condensed milk
Wisk together, pour in graham cracker crust (i like shortbread crust better) and put in 350 oven for 15 minutes, cool, then put in fridge (icebox)

melt some butter, add lots of lemon juice, salt, white pepper, and crabmeat. great topping for fish, steak, or even fried paperclips.
